Eat: red apple, cinnamon and brown sugar galettes

Crisp juicy red apples are the feature of these apple galettes and the addition of sweet brown sugar and fragrant cinnamon makes them extra delicious. Even though the pastry is made from scratch, it isn’t difficult to make, and makes the galettes that little bit more special.

They will keep for a day or two out of the fridge, making them a great addition to work or school lunchboxes or as a sweet mid-morning treat. However we prefer to eat them just out of the oven when they are still warm, topped with vanilla ice cream or homemade custard.

Ingredients (makes 4 galettes)


1 1/2 cups of plain flour

180g of cold butter, cubed

2 tablespoons of brown sugar

1/3 of a cup of chilled water

1 teaspoon of salt

1 tablespoon of milk


2 red apples, cut in half, cored and finely sliced

1 tablespoon of brown sugar

3/4 of a cup of water

2 teaspoons of ground cinnamon

4 teaspoons of butter

1 tablespoon of milk

Ice cream, to serve


Heat oven to 180C (350F). To make the pastry rub butter in to flour, brown sugar and salt until large crumbs form. Sprinkle with chilled water and milk and mix in to a rough dough.

Transfer to a floured board and knead for about 2-3 minutes. Roll out flat in to a circle shape approximately 16 inches in diameter and 1/4 inch thick. Using a small bowl or plate to cut four circles out of the pastry.

In a small saucepan, gently simmer the water, brown sugar and cinnamon for about 3-4 minutes. Remove from heat and aside. Lay pastry circles on a sheet of baking paper on a baking tray. Divide apple slices equally between each circle. Pinch the edges of each pastry circle up to form edges. Drizzle each galette with one tablespoon of sugar syrup and top with a teaspoon of butter.

Using a pastry brush, brush edges with milk and sprinkle with a little extra brown sugar. Place in oven and bake for about 25-30 minutes until the pastry is golden and the apples are cooked through. Remove from oven and allow to sit for a couple of minutes before topping with a scoop of vanilla ice-cream and remaining cinnamon sugar syrup. Serve and enjoy!
